How about summertime and the amazing abundance from nature… Have you ever tried to make RAW FOOD Hummus? Mmmmmmmmm….
We are so lucky to be connected to an organic farm, and all the heavenly seasonal produce available there. Everyone should be able to have this around the corner from where they live really, and if you are that is great, but if you are not, just buy organic as far as possible, and if you have to buy conventional than we just send love and blessings of ALL IS WELL! So at the moment at the organic farm where Hilde works the Butter beans (sometimes called Lima beans or Broad beans) are ready, and she got an idea for a super powerfully charged, nutritious, and a thousand times better than the original Hummus made from sad old canned chickpeas. The following is the instructions from Hilde.
HERE’S WHAT YOU NEED FOR 4-6 SERVINGS
- 300 – 400 grams of fresh Butter beans
- 1-2 lemons, juiced
- 2-4 fresh garlic cloves
- 1 – 2 dl water
- 1 dl EVOO (Extra Virgin Olive Oil)
- Herb salt
- Dill -optional
HERE’S WHAT YOU DO
Take your fresh green Lima beans (or any type of fresh bean or pea picked in your garden or fresh from your local market.) We love using Lima beans when they are fresh before they dry and become hard. Peel the skins and add the beans to your blender. Then add fresh garlic and lemon to it according to your preference. We love loads of this, and lemon is great for alkalizing the body tissues, so go for it! Mix in the blender using as little EVOO (Extra Virgin Olive Oil) and water as possible, remember the beans in themselves contain water. Don’t be too heavy on the oil, with water instead it gives a luxurious fluffy consistency that is just divine. Add your favorite salt, I love herbal salt or Himalaya salt. Serve with a big summer salad, sticks from carrot, cucumber or celery, or raw food bread, whatever you like really!
Added bonus with this Hummus is that it comes out a brilliant soft green color that is so beautiful to look at! You feel the freshness. You can add any spice or herb that puts a smile on your face, I will only suggest Dill as I love it and also it will not mess up the light green color of your fresh Hummus! Not only does it look fantastic, but it is highly nutritious too, and provides you with loads of high quality, vegan proteins too. This recipe just came to me one summer when I was actually working at this lovely farm. Funny how Mother Earth just inspires us to be creative with her abundance and puts ideas into our heads like that! I have served this Hummus so many times to friends and colleagues, and it quickly became a favorite and a huge crowd pleaser! Please enjoy some light green abundance today! WHY SHOULD WE EAT HUMMUS
There are many amazing health benefits from eating hummus and it is a great dish to add to your raw food diet. It is important for raw-fooders to make sure they consume enough plant-based proteins. However, this is not difficult because there are many excellent sources of protein available from plants. Protein is important for the body to operate at its best recovery and immune function health. Hummus is a wonderful source of protein from plants. It is estimated that 100 grams of hummus provides about 8 grams of plant-based protein(yaaaay!).
