In the northern hemisphere we are now entering the berry season, and with those totally fantastic mangos that we get from India and Pakistan at the moment, this calls for an amazing blend of northern and southern flavours! The mango and licorice from the southern warm countries, and the raspberry and elderflowers from the cool forest of the north.

We like to add quite a bit of water in the smoothie which gives it a more juice like texture of course, but this is totally up to you. It can be served as a thich smoothie, or as an ice cream if you blend some ice cubes, and freeze for a little while. Either way, a wonderful thirst quencher in the summer heat.
-2 mangoes, deseeded
-2 – 3 handfuls of frozen rasperries
-1 bouquet of freshly picked flowers from the elder tree. If you can’t get a hold of this, you can add some rose petals instead. All roses are edible.
-1 – 2 tbls of 100% licorice powder.
-1 stalk of freshly picked chevril for some green alibi!
-1 – 2 tbls raw honey or raw agave syrup, optional
-1 – 2 litres of water
Run the ingredients in your blender until smooth and delicious

The taste of this smoothie is divine, and on top of that it of course have so many other health benefits! Licorice is known to aid digestion, and health benefits of elderflower include; -lowers colesterol, good for urinary tract infections, they are anti viral, and they are used to prevent colds and flues.
